Mediterranean Roast Beef Sandwich

  • 1 loaf of Panné Provincio® Artisan Bread
  • 8 oz. roast beef, sliced thin
  • 2 medium roma tomatoes, diced with dried oregano, basil, and thyme
  • 2 scallions, sliced thinly
  • 3 oz. crumbled feta cheese
  • 1 medium cucumber, peeled and diced
  • extra virgin olive oil

In a medium bowl mix the scallion, cucumber, tomato, and feta cheese with 2 tbsp. extra virgin olive oil.

Sandwich assembly: Slice bread lengthwise and toast or grill inside of bread. Spread cheese spread onto bottom inside of bread and layer with roast beef. Cut sandwich into serving portions.
