Roast Pork Sandwich

  • 1 loaf of Artisan Bread
  • 8 oz. roast pork, sliced &#188” thick
  • 4 oz. dill havarti cheese
  • 3 tbsp. dill mustard
  • 3 tbsp. mayonnaise
  • ½ small yellow onion, sliced thin
  • ½ cup sauerkraut, rinsed thoroughly
  • 2 tbsp. butter

Melt butter in pan, add onion slices, and sauté until tender but crunchy. Add sauerkraut and continue to cook for 5 minutes while stirring occasionally. Remove from heat and set aside. Add salt and pepper as desired.

Sandwich assembly: Slice bread lengthwise. Toast two slices, spread one slice with mustard. Layer with cheese, sliced pork, and sauerkraut. Spread top slice with mayonnaise and cover sandwich with lid. Cut sandwich into serving portions.
