Southwest Chicken Breast Sandwich

  • 1 loaf of Artisan Bread
  • three 6 to 8 oz. chicken breasts
  • 4 oz. salsa
  • 2 avocados, peeled and pit removed then sliced
  • 4 oz. colby jack cheese, sliced

Mexican spice blend: 1 tsp. chili powder, 1 tbsp. ground cumin, 1 tsp. garlic powder, ¼ tsp. cayenne pepper Mix spices and rub chicken breasts on both sides. Grill chicken breast until juices run clear, set aside. Sandwich assembly: Slice loaf lengthwise. Cut chicken and place on bread. Top with avocado slices, salsa, and cheese. Place sandwich under broiler to melt cheese. Cut sandwich into serving portions.
