Spicy Turkey Sandwich

  • 1 loaf of Artisan Bread
  • 12 oz. home-style roast turkey breast, sliced &#188” thick
  • ½ cup mayonnaise
  • ½ cup grated parmesan cheese
  • 3 tbsp. Giardiniera mix (spicy vegetables in oil)
  • ½ lemon, juiced
  • 4 oz. provolone cheese
  • 1 large tomato, sliced
  • 1 packed cup fresh spinach leaves

Artichoke spread: Place artichoke hearts into food processor and pulse 1 to 2 times. Add mayonnaise, Giardiniera mix, grated cheese, and lemon juice. Pulse 1 to 2 times, enough to make spread chunky. Add salt and fresh ground pepper as desired.

Sandwich assembly: Slice bread horizontally and toast or grill. Rub bread with fresh garlic clove while warm. Spread artichoke mix onto inside bottom of bread. Layer with spinach leaves, turkey, provolone cheese, and tomato slices. Cover with bread lid, and cut sandwich into serving portions.
