Hearty Chicken Sandwich

  • 1 loaf of Artisan Bread
  • one 4 oz. boneless/skinless chicken breast
  • 2 canadian bacon, thinly sliced
  • 2 sun-dried tomato halves, oil packed
  • ½ cup alfalfa sprouts, loose packed
  • 2 low fat mozzarella slices
  • 1 tbsp. low fat mayonnaise
  • extra virgin olive oil

Pre-heat grill or broiler to medium high. Brush chicken breast with olive oil. Grill or broil chicken until juices run clear, 3 to 4 minutes per side. When chicken is nearly done, grill or broil bacon slices until brown around edges.

Sandwich assembly: Slice bread lengthwise and grill or toast. Spread half mayonnaise onto one slice of bread. Slice chicken breast into ½” slices. Layer chicken, bacon, sun-dried tomato, mozzarella and alfalfa sprouts. Spread remainder of mayonnaise onto other slice of bread. Cut sandwich into serving portions.
