Parmesan Chicken Twist Sandwich

  • 1 loaf of Artisan Bread
  • two 6 oz. boneless/skinless chicken breasts
  • 2 cups bread crumbs, seasoned withdried oregano, basil, and thyme
  • 2 eggs beaten, seasoned with salt and fresh ground pepper to taste
  • 3 tbsp. olive oil
  • 2 oz. parmesan cheese, shaved
  • 2 large tomatoes, sliced
  • mayonnaise: ⅓ cup mayonnaise, 2 tbsp. tomato paste, 3 tbsp. fresh-chopped basil, 1 small garlic clove chopped, juice from ¼ lemon. Mix all until well blended.

Using the side of meat tenderizer flatten chicken breast to &#188” thick. Dust chicken with flour, dip into egg mixture, and then cover with bread crumbs. Press crumbs to chicken. Meanwhile heat skillet to medium high with olive oil. Sauté chicken breast until brown on one side, then turn and brown second side for 3 to 4 minutes or until juices runs clear. Remove chicken from skillet, slice chicken into 1” slices.

Sandwich assembly: Slice bread lengthwise and grill or toast under broiler. Spread half of the mayonnaise onto inside bottom half of sandwich. Layer with chicken, tomato slices, and shaved parmesan cheese. Spread remainder of mayonnaise onto inside top of sandwich. Cut sandwich into serving portions.
